We like to call them "Texas Strip Steak" around Mother Acres but you may see them called New York Strip. This popular steak is from the short loin. It is the longer and larger side of the Porterhouse and T-Bone steaks opposite the tenderloin. It is 1" thick and boneless. This cutknow for it's tenderness and flavor.
